Split peas are the developed form of green peas. The dried seeds of peas are peeled and then split, increasing the surface area of the pea. Yellow and green split peas have similar nutritional content and cooking time, but yellow peas tend to have a more earthy flavor, while green peas are sweeter. Split yellow peas are regarded by the same family as lentils and are highly nutritious‚high in both protein and fiber. A half-cup serving of cooked split peas (cup dry) provides 110 calories, 10 grams of protein (20% of the daily value), less than one gram of fat, and 12 grams of dietary fiber.
